Easy Vegan Chocolate Cake by @healthyeating_jo ❤️ Recipe 1 cup whole meal spelt flour (or all purpose or gluten free blend) 1 cup xylitol (or coconut sugar, sugar) 2 tsp baking powder 1/4 cup cacao powder 1 cup soy milk 1 tsp apple cider vinegar 1 tsp vanilla extract 1/8 tsp salt Preheat oven to 180C/350F Mix milk and vinegar and allow to stand for a few mins while you gather the other ingredients Mix all ingredients in a bowl until just mixed Spoon into a greased or lined cake tin Bake for 30 mins or until a toothpick comes out clean Allow to cool. Drizzle with your favourite icing. (So true) Having five portions of fruit and veg a day was chosen by public health campaigners because it was seen as an achievable target for most people. Dr Alison Tedstone, chief nutritionist at Public Health England, explained to the BBC that, "Whilst consuming more than five portions of fruit and vegetables a day may is desirable ... adding pressure to consume more fruit and vegetables creates an unrealistic expectation." The actual recommended figure is 10-12 portions per day 😮 I know I struggle on getting 5 a day so I supplement - simple as that.
